    Real Southern Biscuits

    List of Ingredients




    2 cups all-purpose flour (2 1/2 cups after sifting)
    (use White Lily flour if it is available to you)
    2 tsp baking powder
    1 tsp salt
    1/2 tsp baking soda
    4 Tbsp shortening
    1 cup buttermilk

    Recipe



    Sift together flour, baking powder, salt, and baking soda. Mix in shortening with two knives held together or a pastry blender until mixture is evenly crumbly. Add buttermilk and stir with a spoon JUST until dough forms. (Do not beat or overmix.) Turn dough out onto a well-floured board. Using a pastry scraper, knead dough just until smooth and firm enough to handle. Roll or pat out to 1/2 thick and cut with biscuit cutter. (My mother always used a Calumet baking powder tin with both the top and bottom cut out ....) Gently place biscuits on an ungreased baking sheet (1/2 inch apart if you want them to "touch" as they bake and have soft sides; more if you want them more separate). Bake in 450°-500° oven about 10 minutes or until golden brown.
