Coca-Cola Cake

List of Ingredients




2 cups flour
2 cups sugar
1 cup butter
1 cup coca-cola
3 T. cocoa powder
1/2 cup buttermilk
1 t. baking soda
2 eggs
1 t. vanilla
1 1/2 cups mini marshmallows
Frosting
1/2 cup butter
3 T. cocoa powder
7 T. coca-cola
1 pound confectioners sugar
1 1/2 cups chopped pecans
1 t. vanilla

Preheat oven to 350º. Butter a 9x11x3 inch pan. Sift the flour and sugar together in a large bowl. Combine butter, cola, and buttermilk in a saucepan and bring to a boil. Add the cola mixture to the flour mixture and add the baking soda, eggs, vanilla. Mix well. Fold in the marshmallows. Pour the batter into the pan and bake 45 min or until a toothpick comes out clean. Let the cake cool on a rack for 10 minutes.
To make frosting combine the butter, cocoa and coke in a saucepan and bring to a boil. Remove from heat and stir in sugar until dissolved. Add pecans and vanilla. Spread over warm cake.
