EL DORADO BEEF CASSEROLE
List of Ingredients
1/2 pound ground beef
1 medium onion, chopped
2 cans (8 oz each) tomato sauce
1 cup water
1/4 tsp chili powder
1 package (9 oz) tortilla chips, coarsely crushed
1 cup sour cream
1 cup (4 oz) shredded Monterey Jack cheese
Recipe
Preheat oven to 375 °. Coat a 1 1/2 quart casserole dish with nonstick cooking spray. In a large skillet, brown the ground beef and onion over medium-high heat for 5 minutes. Add the tomato sauce, water, and chili powder; mix well. Reduce the heat to medium-low and simmer for 2 to 3 minutes, or until thickened. Spread one third of the beef mixture in the casserole dish, then top with one third of the crushed tortilla chips, one third sour cream, and one third cheese. Repeat layers two more times, ending with cheese. Bake for 25 to 30 minutes, or until bubbly and the top is golden. 4 to 6 servings.
substitute Fritos for tortilla chips and use more cheese than called for. This is yummy and is even better the next day reheated
