RICE PUDDING
List of Ingredients
1 cup rice
1 cup sugar
1/2 gallon milk
Pour above ingredients into pot and bring to a boil. Stir and simmer for 1 hour with lid on. Stir occasionally.
In separate dish, beat:
2 eggs
1 cup milk
Take a little of the hot mixture out of pan and mix with egg mixture (this helps prevent curdling of the egg). Stir egg mixture into rice mixture.
Add 1 - 2 tsps. vanilla to taste.
If too thick, add a little more milk. Pour into a 13" x 9" baking pan or serving bowl. Cool. Top with cinnamon.
