Cajun batter for fish, shrimp,
List of Ingredients
onion rings or whatever. This is really tasty. Comes from Cajun Cooking
cornstarch 1 ounce
flour 1 ounce
cornmeal 2 tbs.
salt 1 tsp.
onion powder 1/2 tsp.
garlic powder 1/2 tsp.
cayenne 1/4 tsp.
pepper large pinch
eggs 2 lightly beaten
butter 1/2 ounce melted
beer 6 ounces warm
vegetable oil for frying
Recipe
1. Combine all the dry ingredients. Whisk in the eggs, butter and beer together until smooth. Refrigerate at least 3 hours to give the gluten a chance to expand. Whisk again before using.
2. In a deep frying pan or wok, heat 1.5 inches of oil to 350F. Pat the prawns or fish dry, then dip in the batter. Drop some of the fish in the oil, but don't crowd. Fry until golden brown, turning once, about 2 minutes. Drain well on kitchen paper and keep warm while frying the remaining fish or prawns. Be sure the oil returns to 350° before frying the next batch. Continue until all are fried.
