Cooking time 20-25 minutes.
Put a cast iron (or other very heavy) skillet on high and add salt liberally (yes, salt the pan). When the pan is hot, add a small amount of olive oil and begin to brown 1 cut-up fryer (don't use skinless chicken). ALLOW the chicken to char!!!!! When the chicken appears almost too dark on the outside, add 6 or 8 garlic cloves (unpeeled) to the pan then carefully add 1 to 1 1/2 cups white wine (it will whoosh and bubble). Cover immediately and lower temp to medium and allow to cook for 10 to 15 minutes. Serve with some fresh pasta.
The 'char' makes for the flavor, and the wine (cheapest you can find) loses its alcohol content immediately and just makes a wonderful 'sauce'. Eat the chicken with your fingers, and pop the garlic cloves in your mouth whole and force the 'meat' out of the skin using your tongue to apply pressure.
