    CLAM CHOWDER

    List of Ingredients




    1 1/2 c chopped onions
    1 1/2 c chopped celery
    3 c chopped potatoes (peeled)
    1 med carrot, grated
    3 6 1/2 oz cans chopped clams (reserve liquid)
    3/4 c margarine or butter
    3/4 c flour
    8 c milk (or half-n-half)
    1 1/2 t salt
    3/4 t sugar
    3/16 t pepper



    Recipe



    In large soup pan, simmer vegetables in reserved clam liquid for 20 minutes or until tender. Remove to separate bowl. In same pan, melt margarine or butter. Add flour and mix well. Add milk and seasonings. Cook until thick and just bubbly as for white sauce. Add back in vegetable mixture and clams. Stir well. Serves 6. Recipe can easily be divided for less people. Enjoy!!
