FARMHOUSE CHICKEN AND STUFFING CASSEROLE

1 tsp. olive oil
1 c. chopped onion
3/4 c. sliced celery
2 c. water
2 tbsp. yogurt based spread, Brummel and Brown
10 oz. can low fat Cream of Chicken soup
8 oz. cornbread stuffing mix
1/2 tsp. pepper
3 c. roasted chicken breast meat, chopped
Recipe
Heat oven to 350 deg.
Heat oil in a non-stick skillet over med.-high heat. Add onion and celery; saute 4 minutes or until onion is tender. Increase heat to high; add water. Bring to a boil and cook 4 minutes, until celery is tender. Stir in spread until melted. Add soup, stuffing and pepper. Remove from heat and stir in chicken.
Place mixture in a 2 quart casserole that has been sprayed with cooking spray. Bake at 350 deg. for 45 minutes or until top is golden.
