    1 c. chopped onion
    1 c. shredded carrot
    1 c. shredded zucchini
    1 clove garlic, minced
    1 slice bread, torn into small pieces
    2 tbsp. skim milk
    10 oz. extra-lean ground beef
    2 tbsp. egg substitute
    1 tbsp parsley
    1 tsp salt
    1 tsp. freshly ground pepper
    1/2 tsp. dried thyme leaves
    1/4 tsp. ground sabe

    Recipe



    Preheat oven to 350. Spray a 1 qt. baking dish with cooking spray. Spray a medium skillet with cooking spray; heat. Add onions; cook over medium-high heat, stirring frequently.until golden brown. Add carrot, zucchini and garlic; cook, stirring constantly, 3 minutes, until vegetables are softened.. Remove from heat, set aside to cool. In a small bowl, combine bread and milk; let stand 10 minutes. In a large bowl, combine, beef, egg substitute and spices with bread and cooked vegetables. Shape into oval loaf; place into prepared dish. Bake 1 hour and 15 minutes, until cooked through. Remove from oven; let stand 5 minutes. Cut into 16 equal slices.

    Makes 4 servings (4 slices each)
