GINGERBREAD MUFFINS

1 1/4 C.whole wheat flour
1/2 c. nonfat dry milk
1 1/2 tsp. ground ginger
3/4 tsp. cinnamon
1/4 tsp. each nutmeg and ground cloves
1/2 tsp. baking soda
1/2 tsp. baking powder
1/4 c. skim milk
3/8 c. applesauce
3 tbsp. maple syrup
1 tbsp. canola or vegetable oil
1/4 c. egg substitute or 1 egg white
Recipe
Preheat oven to 350. Line 12 muffin cups with paper liners. In a large bowl, sift together dry ingredients. In a small bowl, combine liquids. Pour over dry ingredients and stir until blended. DO NOT OVER MIX. Spoon into muffin tins and bake for about 20 minutes.
