Butterscotch Finger Bars -- Serves 18

- 8 oz. Chocolate Chips
- 1/4 Cup Butter, melted
- 1 Cup Chocolate Cookie Crumbs
- 1 Cup Milk
- 1/4 Cup Crunchy Peanut Butter
- 1 Pkg Butterscotch instant pudding
- 8 oz Cool Whip
- 3/4 Cup Chopped Peanut Brittle
- 3 Tbsp Butter
Instructions
- Line a 9" square pan with foil.
- Chop 4 squares of chocolate and set aside.
- Mix melted butter and cookie crumbs and press into foil lined pan.
- Blend milk and peanut butter in a medium bowl.
- Add pudding.
- Beat with s whisk for 1-2 minutes.
- Let stand 5 minutes.
- Fold in Cool Whip, chopped chocolate and peanut brittle.
- Spread over cookie crumbs.
- Freeze for 4 hours.
- Melt remaining chocolate with 3 Tbsp butter.
- Spread over pudding mix. Chocolate will melt immediately.
- Lift dessert from pan using the foil and cut into 18 bars.
