Recipe Introduction
This wonderful guacamole recipe comes from Joyce Piotrowski's former two restaurants, the Armadilla Grill in the Washington, DC area. It requires a bit of preparation, but the intense flavor is well worth the effort. You will need to grill the onions either on an outdoor grill or on one of the ridged grilling pans on top of the stove. The garlic must be roasted whole in the oven for 45 minutes at 350 degrees. You may also find roasted garlic sold in some specialty food stores. This guacamole would make a great festive dip for any party.
List of Ingredients
1 large yellow onion, peeled and sliced thick
2 tablespoons oil
1 tablespoon red wine vinegar
2 tablespoons lemon juice
1 teaspoon coarsely ground black pepper
1 teaspoon ground cumin
1 teaspoon salt
2 cups coarsely crushed ripe avocado
1 cup seeded and diced fresh tomato
2 teaspoons roasted garlic puree
2 teaspoons finely minced and seeded jalapeno
1/2 cup chopped green chilies (canned)
1/4 cup cilantro leaves, loosely packed
Juice of 1/2 lime or more to taste

Directions
Slice the onion in 1/2-inch-thick slices and marinate it in the oil, vinegar, lemon juice, pepper, cumin, and salt for 1 hour. Grill over hot coals until the onion is translucent and nicely charred. Cool and chop. Combine with the remaining ingredients and serve with tortilla chips.
