    Amish Friendship Bread Starter

    Karen S., one of my teachers, got me started on this bread and that in turn got me interested in sourdough. Karen had diligently fed this starter and made enough friendship cakes to supply everyone she knew.

    She finally became so tired of baking cakes that she just tossed the starter away. It's easy to become a slave to the starters, but I refrigerate mine and feed them when the spirit moves me.

    List of Ingredients
    3 cups milk
    3 cups sugar
    3 cups flour
    Instructions
    Mix and cover the bowl with a clean kitchen towel. Do not use metal tools or bowls for storing this starter. Follow the directions below.
    Day 1: make starter or use one received from someone else
    Day 2: stir with a wooden spoon
    Day 3: stir with a wooden spoon
    Day 4: stir with a wooden spoon
    Day 5: add 1 cup flour, 1 cup sugar, and 1 cup milk. Stir.
    Days 6-9: stir each day with a wooden spoon
    Day 10: Add 1 cup flour, 1 cup sugar, and 1 cup milk. Stir.
    Final Comments

    On the tenth day, you're supposed to use 2 cups of the starter in Amish Friendship Bread, give 1 cup to a friend, and keep 1 cup to replenish. I always keep 2-4 cups available for myself. This allows me to give away a cup at a time to anyone who wants it.
