    CORNMEAL MUSH

    List of Ingredients

    1 1/2 teaspoons salt
    2 1/2 cups cornmeal
    1/2 cup all-purpose flour
    2 cups cold water
    6 cups boiling water

    Recipe

    Combine salt, cornmeal, and flour. Whisk in cold water, mixing until smooth and thoroughly blended. Pour the boiling water into the top of a large double boiler and slowly whisk in the cornmeal mixture over simmering water set over medium heat. Stir until all lumps are dissolved. Continue to cook over medium heat for at least one hour, stirring every 15 minutes.
    Reduce the heat to low and continue cooking slowly for another 1 1/2 hours, stirring every 30 minutes. Pour the hot mush into a buttered 9 x 3-inch loaf pan to cool.
    When cold, slice into 1/2-inch thick slices, dredged lightly in all-purpose flour, and fry in oil or butter over medium heat until crisp and golden brown.
    Serve with butter and maple syrup.
