    PUMPKIN BARS WITH CREAM CHEESE FROSTING

    4 eggs

    2 c. sugar

    1 15 oz. Can or 2 c. cooked pumpkin

    2 tsp. baking powder

    1/2 tsp. Salt

    1/2 tsp. Ginger

    1 c. vegetable oil

    1/2 tsp. Nutmeg

    2 c. all purpose flour

    1 tsp. soda

    2 tsp. cinnamon

    1/2 tsp. Cloves

    Pumpkin Bars
    4 eggs

    2 c. sugar

    1 15 oz. Can or 2 c. cooked pumpkin

    2 tsp. baking powder

    1/2 tsp. Salt

    1/2 tsp. Ginger

    1 c. vegetable oil

    1/2 tsp. Nutmeg

    2 c. all purpose flour

    1 tsp. soda

    2 tsp. cinnamon

    1/2 tsp. Cloves

    Blend eggs, oil, sugar and pumpkin in large mixing bowl. Measure flour, baking powder, soda, salt, cinnamon, ginger, cloves and nutmeg into one-quart measure. Mix together lightly with a fork. Stir into pumpkin mixture. Divide batter equally into two (8 x 8) glass baking dishes. One at a time, microwave 5 1/2-6 minutes on high or bake 25-30 minutes at 350 degrees until wooden pick inserted in center comes out clean. Let stand until thoroughly cooled. Top with Cream Cheese Frosting.

    Cream Cheese Frosting

    2 pkgs. (3 oz. each) cream cheese

    1/2 c. butter or margarine

    1 T. cream or milk

    1 tsp. vanilla

    4 c. powdered sugar (sift if lumpy)

    Combine cream cheese and butter in medium mixing bowl. Microwave one-two minutes on 20 percent power or until soft but not melted. With a fork, stir in cream and vanilla. Gradually add sugar until frosting reaches spreading consistency. Frost pumpkin bars. Cut into two-inch squares.
