    Pat's Pumpkin Squares

    List of Ingredients

    1/2 cup butter, softened
    1/2 cup brown sugar
    1 cup all-purpose flour
    1/2 cup regular rolled oats (not the instant)
    2 eggs
    3/4 cup sugar
    15 oz. can pumpkin
    12 oz. can evaporated milk
    1/2 tsp. salt
    1 tsp. ground cinnamon
    1/2 tsp. ground ginger
    1/4 tsp. ground cloves

    Recipe

    Directions:
    Preheat oven 350 degrees. In a medium bowl, cream together butter and brown sugar. Mix in the flour and then fold in the oats. Spray 9 X 9 inch baking dish with a cooking spray. Press mixture into pan. Bake in oven for 15 minutes until set. In a large bowl, beat eggs with white sugar. Beat in pumpkin and evaporated milk. Mix in salt, cinnamon, ginger and cloves. Pour over baked crust. Bake in oven for 50 - 60 minutes until set. Let cool before cutting into squares.
