    1-2 lg. head cabbage
    1 lb. chuck roast (chili grind)
    1/2 c. medium grain rice
    1 tsp. salt
    1 tsp. pepper
    1 Tbsp. cinnamon
    1/4 c. clarified butter (or 1 1/2 sticks butter)
    3 Tbsp. water
    2 c. water + 1 tsp. salt
    3-4 lg. cloves garlic (whole)

    select cabbage that is light in weight) Core cabbage using circular motion with knife. Place in microwavable dish with a few tablespoons of water. Cook on high for 7-8 minutes until leaves begin to separate. Place wilted leaves in strainer to cool and drain. Trim the "rib" from top of each cabbage leaf. Set leaves aside. Combine meat, rice, salt, pepper, cinnamon, butter and about 3 Tbsp. water. Mix well. Place approximately 1 tablespoon of mixture across top of cabbage leaf and roll securely, tucking sides in. Give a firm but gentle squeeze. Arrange in layers in saucepan in circular pattern. Add garlic cloves between layers. Sprinkle top with 1 tsp. salt and 2 cups water. Place small plate inside pot on top of cabbage rolls so they won't float. cover and bring to a boil over medium heat. Reduce heat to low and cook 45 minutes. Remove the plate and add 7-8 pats of butter on top with juice from one lemon. Cover & let stand for 15 minutes before serving. Invert onto round platter, garnish with lemon slices and parsley.
