This is a do ahead freezer recipe.
List of Ingredients
4 lbs Chicken
2 pkg Taco Seasoning
2-3 cups Cheddar Cheese, shredded
4 cans Enchilada Sauce
2 cups Salsa
20 Tortillas
Recipe
Brown chicken in skillet. Add seasoning and salsa. Simmer until thick. Warm tortillas. Add cheese and chicken to tortilla. Roll. Freeze in 4 or 5 (*) casserole pans. To serve: Thaw. Pour enchilada sauce over. Top with cheese. Bake 375 until warm, about 30-45 minutes. (* This recipe makes 5 dinners. Eat one tonight, so don't freeze it. Or eat something else and freeze and extra dinner.)
