Bean & Bacon Grilled Quesadillas

1 can (15 oz.) chili beans, drained
¾ C. shredded low-fat cheddar cheese (1.5g fat per ounce)
½ C. shredded reduced-fat Monterey jack cheese (g fat per ounce)
¼ C. imitation bacon bits
2 jalapeno peppers, seeded and chopped
2 T. chopped fresh cilantro
½ tsp. Mexican seasoning
½ tsp. ground cumin (optional)
6 8-inch 96% fat-free whole wheat flour tortillas (2.5g fat each)
Butter-flavored cooking spray
6 T. salsa

Directions:
Preheat grill to medium heat. In a medium mixing bowl, combine beans, cheeses, bacon bits, jalapenos, cilantro, Mexican seasoning and cumin. Set aside. Spray one side of a tortilla lightly with butter-flavored cooking spray. Turn over and spread 1 tablespoon salsa on opposite side. Spread ½ cup bean mixture over half of tortilla (salsa side) and fold tortilla in half. Repeat with remaining tortillas and filling. Grill quesadillas on covered grill 4-6 inches from coals 4-5 minutes on each side or until lightly browned and cheese is melted. Slice each quesadilla into 3-4 wedges before serving.
