1 medium eggplant
1 medium zucchini
1 onion, chopped
1/4 cup green pepper, minced
1 carrot, diced
2 eggs, beaten
1/2 cup water
1/2 cup Parmesan cheese
2 tsp. salt
1/2 tsp. black pepper
2 tbsp. butterRecipe
Melt butter in skillet over medium-high heat and cook chopped onions until transparent. Pour butter and onion into a crockpot. Beat eggs and add water, salt, pepper and cheese. Peel eggplant and zucchini and chop. Put eggplant, zucchini, green pepper and carrot in crockpot. Pour egg mixture over vegetables; stir well. Cover crockpot with lid and cook on high for 2 hours. reduce heat to low and cook up to an additional 4 hours.
