    Pipette Garlic Chicken Salad

    1 12 oz. box pipette pasta
    6 small cloves of garlic
    1 1/4 cups olive oil
    1/3 cup fresh basil leaves, chopped
    1 tbsp. fresh rosemary leaves
    3 cooked chicken breasts, cut into strips or cubed
    3/4 cup green onion, sliced
    3/4 cup Parmesan cheese, grated

    Cook pasta according to package directions, drain. Separate cloves of garlic and drop into boiling water for 1 minute. Drain and peel. Place peeled cloves in a small saucepan with oil. Cook gently, covered, stirring occasionally, for about 25 minutes or until garlic is tender. Puree garlic with 3/4 cup of the olive oil, the basil and rosemary leaves. Place pasta in a large bowl and add garlic puree, chicken, onion, 1/2 cup olive oil and Parmesan cheese. Mic thoroughly. Add more olive oil if needed to moisten salad. Serve at room temperature over crisp, chilled lettuces.
