Tri-Color Fiori w/ Mozzarella and Tomato

8 oz. tri-color fiori
1/2 cup olive oil
1 tbsp. lemon zest
1/4 cup fresh lemon juice
1/2 tsp. salt
1/4 tsp. pepper
1 pint grape OR cherry tomatoes, halved
1/2 lb. fresh mozzarella cheese, cut into 1/2 inch cubes
1/3 cup red onion
1/4 cup fresh basil leaves, choppedRecipe
Cook pasta according to package directions, drain. Combine olive oil, zest, lemon juice, salt and pepper. Stir into cooked pasta. Add tomatoes, mozzarella, red onion and basil. Toss to coat. Cover and chill.
