This is a very yummy cracker!
List of Ingredients
4 oz. sharp Cheddar cheese, shredded(1 cup)
1/4 cup butter
1/4 tsp. dried thyme, crushed
1/8 tsp. ground red pepper
3/4 cup all-purpose flour
1/2 cup finely chopped pecans

In a medium mixing bowl, bring the sharp Cheddar cheese and butter to room temperature(about 30 minutes). Beet cheese mixture with mixer until well combined. Add thyme and red pepper. Beat until combined. With a wooden spoon, stir in the flour and finely chopped pecans until combined. Form into a ball. Shape into a 8 inch log. Wrap with plastic wrap and chill for at least 4 hours or until the mixture is firm. With a sharp knife, cut dough into 1/8 inch thick slices. Place on cookie sheets that have been lightly coated with cooking spray. Bake in a 350 degree oven about 10 minutes or until lightly browned.
