Recipe Introduction
There's nothing like a warm bowl of potato soup on a chilly day!
List of Ingredients
6 slices bacon, halved crosswise
1/2 cup chopped onion
1/2 cup chopped celery
2 large potatoes, peeled and coarsley chopped
1 cup water
1 tsp. mustard seed or Dijon mustard
1 1/2 cups light cream or milk
1 10 3/4 oz. can condensed cream of chicken soup
Fresh snipped parsley(optional)Recipe
In a large saucepan, cook bacon over medium heat until crisp. Remove bacon, reserving 1 tbsp. drippings in pan. Drain bacon on paper towels. Crumble and set aside. Add onion and celery to saucepan. Cook until tender. Stir in potatoes, water and mustard. Bring to boiling; reduce heat. Simmer, covered, for 15 minutes or until potatoes are just tender. Stir in light cream and condensed soup. Heat through; do not boil. Stir in bacon. Garnish with parsley if desried.
