Red Onion Poppy Seed Salad

Recipe Introduction
A good salad is always a welcome addition to any meal.
List of Ingredients
- 1 cup sugar
- 2 tsp dry mustard
- 2 tsp salt
- 2/3 cup vinegar
- 1 small red onion, divided. Use several slices for the salad and
- chop the remaining onion
- 2 cups oil
- 3 tbsp poppy seeds
- slivered almonds for salad topping
- Romaine, Green Leaf Lettuce and/or Red Leaf Lettuce
Instructions
- Combine the sugar, dry mustard, salt, vinegar, chopped onion and oil in a blender, blend for 1 minute.
- Add the poppy seeds and blend just a few seconds. (Makes 4 cups)
- Pour into a jar with a tight fitting lid. Store in the refrigerator. Make the dressing the day before, if possible.
- Toss salad greens, sliced red onions and slivered almonds. Add dressing just before serving and toss.
