PUMPKIN SOUP

List of Ingredients
- 1 cup chopped onion
- 1/3 cup chopped celery
- 3-4 garlic cloves
- 4 tablespoons crisco pure canola oil
- 4 cups chicken broth
- 1 15 oz. can unsweetened pumpkin
- 1 1/4 teaspoons ground ginger
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup apple juice
Instructions
- saute first 3 ingredients in hot oil in a large sause pan over medium heat for 5-6 minutes
- stir in broth and next 5 ingredients and bring to a boil over medium-high
- reduce heat to low and simmer stirring occasionally for 20 minutes
- remove from heat and let cool slightly
- process mixture in blender until smooth
- return pumpkin mixture to saucepan stir in apple juice and cook over medium heat 3-4- minutes
- garnish with chopped chives and sour cream
- serve
