    **Two Minute Cheddar-Scallion Bread**

    That's 2 minutes to prepare the batter. No kneading or rising! Enjoy the wonderful aroma and flavor of this yeast bread! Great with soup or stew or for sandwiches.


    List of Ingredients


    • 2-2/3 cups self-rising flour (be sure it is not self-rising CAKE flour)
    • 12 oz. beer, freshly opened, chilled or at room temp
    • 1 cup (4 oz.) shredded sharp Cheddar cheese
    • 1/2 cup thinly sliced scallions
    • 1-1/2 tsp. poultry seasoning


    Instructions


    1. Heat oven to 375*.
    2. Lightly grease a 9X5X3-inch loaf pan.
    3. In bowl, mix flour with cheese, scallions, and seasoning.
    4. Add beer and stir with a rubber spatula just until mixed and flour is moistened completely. Scrape into prepared pan.
    5. Bake 50 to 55 minutes, until top is lightly browned, sides pull away from pan and pick inserted into center comes out clean.
    6. Cool in pan on a wire rack 5 minutes, then turn out on rack to cool.
    7. Best cut with a serated knife.


    Final Comments


    For variation: substitute 1 cup mixed country olives, kalamata olives or black olives, pitted and coarsely chopped, 1/2 cup grated parmesan cheese and 1-1/2 tsp. Italian seasoning for the cheddar cheese, scallions and poultry seasoning.
