**Two Minute Cheddar-Scallion Bread**
That's 2 minutes to prepare the batter. No kneading or rising! Enjoy the wonderful aroma and flavor of this yeast bread! Great with soup or stew or for sandwiches.
List of Ingredients
- 2-2/3 cups self-rising flour (be sure it is not self-rising CAKE flour)
- 12 oz. beer, freshly opened, chilled or at room temp
- 1 cup (4 oz.) shredded sharp Cheddar cheese
- 1/2 cup thinly sliced scallions
- 1-1/2 tsp. poultry seasoning
Instructions
- Heat oven to 375*.
- Lightly grease a 9X5X3-inch loaf pan.
- In bowl, mix flour with cheese, scallions, and seasoning.
- Add beer and stir with a rubber spatula just until mixed and flour is moistened completely. Scrape into prepared pan.
- Bake 50 to 55 minutes, until top is lightly browned, sides pull away from pan and pick inserted into center comes out clean.
- Cool in pan on a wire rack 5 minutes, then turn out on rack to cool.
- Best cut with a serated knife.
Final Comments
For variation: substitute 1 cup mixed country olives, kalamata olives or black olives, pitted and coarsely chopped, 1/2 cup grated parmesan cheese and 1-1/2 tsp. Italian seasoning for the cheddar cheese, scallions and poultry seasoning.
