List of Ingredients 3 cloves garlic, chopped 1 onion, chopped 1 zucchini, sliced 1 yellow squash, sliced 2/3 can of corn kernals 1/2 cup chopped green chiles 2/3 cup Jack cheese, grated 2 Tbsp. chopped cilantro 1 tsp. basil 10 eggs for a 12-inch pan or 8 eggs for a 8-inch pan slightly beaten salt & pepper Instructions Using an ovenproof skillet, saute in olive oil: garlic, onion, and squashes until slightly tender. Add corn, chiles, cheese, cilantro, and basil; Mix well. Add eggs, salt, and pepper; Mix well. Cook over medium heat for 3 to 4 minutes. Transfer to a 300* oven for about 15 minutes or until lightly browned on top and inserted knife comes out clean.
