Crockpot Squash Casserole
List of Ingredients
- 2 lbs. yellow summer squash or zucchini or a mixture, thinly sliced (about 6 cups)
- 1/2 medium onion, chopped
- 1 cup shredded carrot
- 1 can (10 1/4 oz.) condensed cream of chicken soup (cream of celery can be substituted)
- 1 cup sour cream
- 1/4 cup flour
- 1 package (8 oz.) seasoned stuffing crumbs
- 1/2 cup butter or margarine, melted
Instructions
- In large bowl, combine squash, onion, carrot and soup.
- Mix sour cream and flour, stir into squash.
- Toss stuffing crumbs with butter and place 1/2 in crockpot.
- Add squash mixture and top with remaining stuffing crumbs.
- Cover and cook on LOW for 6-8 hours.
Final Comments
Servers 4-6.
To reduce fat content, use non-fat sour cream and low-fat soup.
