    **Flan**

    This a wonderful caramel custard that is Mexican tradition!


    List of Ingredients


    • 1-1/2 cups sugar
    • 4 eggs
    • 1 can (14 oz.) condensed milk (not evaporated
    • 1 cup water
    • 1 tsp. vanilla or rum extract


    Instructions


    1. Carmelize sugar by pouring into heavy skillet and stirring frequently with a WOODEN spoon over low flame until sugar melts and turns golden brown.
    2. Pour sugar immediately into 1-quart casserole, coating bottom and sides evenly (accomplished by holding casserole dish in your hands and tilting to cover).
    3. Allow sugar to cool and prepare custard: beat eggs, add milk, water, and vanilla.
    4. Pour into casserole and set casserole into larger pan containing 1-inch of hot water.
    5. Bake in 350* oven for 1-1 1/2 hours or until inserted knife in center comes out clean.
    6. Loosen with spatula and turn onto serving dish;
    7. Chill and serve with sauce from casserole dish.
