Taco Fiesta Pie

- 1 package Pillsbury Ready-Made Pie Crusts (2 per package)
- 1 lb. ground beef, ground turkey or 1 can Veggie-Burger
- 1 (15 oz.) can spicy chili beans, undrained
- 1/2 cup salsa
- 6 oz. (1 1/2 cups) shredded cheddar cheese
- 1 cup shredded lettuce
- 1/2 cup chopped tomato
- OPTIONAL: green onions/sliced, sour cream, black olives/sliced, chopped green chilies.
Instructions
- Unfold one pie crust (easier if you allow it to thaw first); place into 9-inch pie plate. Prick bottom and sides with fork; flute edges.
- Cut 13 (2-inch) triangles from the remaining second crust and place, triangle point up, around the sides of the dish.
- Bake at 425 degrees for 9 to 11 minutes or until lightly golden brown.
- In large skillet, brown ground beef; drain.
- Add salsa and 1 cup cheese; mix well.
- Cook over low heat for 2 to 3 minutes or until cheese melts.
- Spoon mixture into baked shell. Top with your optional favorites.
