Linguica and Green Beans

Recipe Introduction
A hearty, filling soup! Serve with a nice warm loaf of crusty bread for dunking!
List of Ingredients
- 1 lb. fresh green beans, tipped and cut into bite-size pieces
- 1 small onion, diced
- 1/2 green bell pepper, diced
- 2 potatoes, diced
- 1/2 lb. linguica, cut into bite-size pieces
- 1/2 tsp. ground Allspice
- 1 (8 oz.) can of tomato sauce
Instructions
- Saute onion and pepper in 1 Tbsp. butter or cooking oil until onions are tender.
- Place onions, bell pepper, potatoes, linguica, and green beans in a large saucepan and add enough water to cover. Add allspice, tomato sauce, salt and pepper to taste.
- Cover and simmer until beans and potatoes are fork tender (approx. 1 hour).
Final Comments
Serves 4; **I like to add 1 large can crushed tomatoes with puree instead of tomato sauce. This makes it alittle thicker. I also add crushed red pepper and garlic!
