Portugues Garlic-Roasted Pork(Torresmos)

List of Ingredients
- 1/2 lb. fresh medium-hot red peppers, such as jalapenos, seeded and stemmed
- 1 Tbsp. salt
- 1/4 cup paprika, sweet or hot, depending on preference
- 10 cloves garlic, chopped
- 1/2 cup white wine
- 1/4 cup red wine
- 1 (4-lb) boneless pork butt or roast, cut into 8 pieces
- 1/2 cup olive oil
- salt, freshly ground black pepper
Instructions
- Mince peppers and salt in bowl of food processor fitted with metal blade.
- Combine minced peppers with paprika, garlic, white wine and red wine in large bowl.
- Add pork pieces, turning to coat well.
- Cover with plastic wrap and refrigerate 24 hours.
- Remove from marinade.
- Pour oil in large roasting pan, add pork, season with salt and pepper and roast at 375 degrees for 1 hour.
- Turn pork often to keep moist.
- Reduce heat to 325 degrees and cook until pork is nicely browned, another 15-20 minutes.
