    **Parmesan & Basil Chicken Salad**

    Serve this wonderful salad on a nice bread of your choice!


    List of Ingredients


    • 2 whole chicken breasts, boneless (about 1-1/4 lb.)
    • 1 cup mayonnaise
    • 1 cup finely chopped, fresh basil
    • 2 cloves garlic, finely chopped
    • 2 Tbsp. walnuts or pine nuts
    • 4 large celery ribs, peeled and coarsely chopped
    • 2/3 cup Parmesan cheese, freshly grated
    • salt and pepper to taste


    Instructions


    1. Preheat oven to 350*; Season chicken with salt and pepper and place in medium baking dish. Roast for 35 minutes, until juices run clear. Let cool.
    2. Cut chicken into small strips and transfer into a large bowl.
    3. In food processor, puree mayonnaise, basil, garlic and nuts.
    4. To chicken, add celery and cheese, tossing well.
    5. Add pureed mixture to chicken and mix well.

    6. Salt and pepper to taste.
    7. Makes 4 to 6 servings.

    TIP: You could boil the chicken if you wish.
