**Pasta Fagioli**
How about a traditional Italian Soup? This recipe is quick, easy and delicious served with a loaf of hot garlic bread!
List of Ingredients
- 2 stalks celery, chopped
- 1 medium onion, chopped
- 2 (14-1/2 oz.) cans chicken broth
- 3 cloves garlic, minced
- parsley, oregano, crushed red pepper, salt to taste
- 1 (16 oz.) can Cannellini beans (white kidney beans), undrained
- 1 small can tomatoe sauce
- 1 (14-1/2oz.) can diced Italian tomatoes, drained
- 1/2 to 3/4 cup uncooked small shell or elbow macaroni
Instructions
- Saute celery, onion, garlic and spices.
- Add chicken broth, tomatoes, and tomatoe sauce.
- Simmer on low for 15 to 20 minutes.
- Add raw pasta and cook 10 to 15 minutes more until pasta is done to your likeness.
- Add beans with their liquid.
- Serve with Parmesan cheese to sprinkle on top!
