**Tortilla Soup**
Serve this with warm flour tortillas, corn bread, or tortilla chips. Have bowls of sliced green onions, chopped cilantro, grated jack cheese, sliced avacados for garnish!
List of Ingredients
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 Tbsp. olive oil
- 2 Tbsp. chili powder
- 1 tsp. oregano
- 1 tsp. Italian Seasoning
- 1 (28 oz. can) crushed tomatoes
- 1 (10-3/4 oz. can) chicken broth
- 1 (10-3/4 oz. can) water
- 1 (15-1/4 oz. can), drained
- 1 (15- 1/4 oz. can) white or yellow hominy, drained
- 1 (4.25 oz. can) diced green chilies
- 1/4 cup chopped, fresh cilantro/Italian parsley
- 1 (14-1/2 oz. can) black beans, rinsed and drained
- 2 boneless chicken breasts, cooked and chopped into bite-size pieces
Instructions
- Saute onion and garlic in oil.
- Stir in chili powder, oregano, Italian seasoning, tomatoes, broth, and water.
- Bring to boil.
- Lower heat to simmer and add corn, hominy, black beans, chilies and chicken.
- Heat throughly and simmer 15 minutes.
- Season with salt and pepper to taste.
Final Comments
If this soup is not spicey enough for you, add additional chili powder or your favorite hot sauce.
