    List of Ingredients


    • 1 quart oil
    • 2 dozen shucked and drained oysters
    • 1/2 tsp. liquid smoke
    • 1/4 cup chili powder
    • 1/2 cup all-purpose flour
    • 1 tsp. cayenne pepper
    • 1 tsp. onion powder
    • 1 tsp. garlic powder
    • salt to taste
    • 1 tsp. hickory-smoked salt


    Instructions


    1. Preheat oil in a large deep fry pot to 350 degrees.
    2. Place the oysters in a small mixing bowl; add liquid smoke and let them soak about 10-15 minutes.
    3. In a bowl or plastic bag, sift together the chili powder, flour, pepper, onion/garlic powder, salt and hickory salt; add oysters and shake to coat well.
    4. Deep fry for 3 to 4 minutes or until golden brown.
    5. Drain on paper towels.
