**Mexican Shrimp Cocktail**
We have enjoyed these in Mexico and now, finally have found the recipe to recreate them at home!
List of Ingredients
- 1 lb. seeded, chopped tomatoes
- 2-1/2 Tbsp. orange juice
- 1 Tbsp. fresh lime juice
- 1 tsp. Worcestershirer sauce
- 1 tsp. horseradish
- 1 lb. large shrimp, cooked
- 1 cucumber, peeled, seeded, diced
- 1 large avacado, diced
- 2 Tbsp. cilantro/chinese parsley, chopped
- 6, 3-inch leafy celery stalk tops
Instructions
- Place tomatoes in glass dish and sprinkle with salt; let stand 1 hour.
- Transfer tomatoes to a food processor and puree until smooth; strain into a large bowl, discarding solids. Season with salt and black pepper.
- In another bowl, mix orange juice, lime, worcestershirer, horseradish. Add to tomatoe mixture.
- Combine cucumber, avacado, shrimp and cilantro;
- In sundae glasses, add shrimp, cuke, avacado, cilantro mixture and spoon sauce over all.
- Garnish with celery stalks.
Final Comments
Serve with ice cold Mexican beer and extra lime.
