Haystacks & Taco Salad

Recipe Introduction
These recipes comes from my sister-in-law. It is a vegetarian version, but you could add meat or browned "vegeburger".
List of Ingredients
- Fritos
- vegetarian refried beans, warmed and seasoned to taste
- shredded cheddar cheese
- shredded lettuce
- fresh tomatoes, diced
- green or red onion, diced
- black olives, sliced
- sour cream
- avacados, sliced or made into gaucamole
- For Taco Salad:
- 1 can cold garbanzo beans, rinse/drained
- 1 can red kidney beans, rinse/drained
- 1 can black beans, rinse/drained
- 1 can chili beans, rinse/drained
- **omit refried beans and sour cream from above recipe
Instructions
- For Haystacks: assemble on your plate in the order listed or any order you wish
- For Taco Salad: mix all ingredients together except the avacados and fritos. Make Taco Salad Dressing: 2 cups mayo with 3 cups salsa (mild or hot, your choice). Serve with sliced avacado, fritos or tortilla chips to put on top.
Final Comments
These two salads are very versatile. You can substitute or add anything you wish! Throw in some jalapeno peppers to add zing!!
