    Ok, I just kind of tossed this all together so there are no exact measurements.

    I took about a 1 lb pack of lean ground beef (could use ground turkey too) added almost a pack of the store bought taco seasoning mix, an egg and probably 1/2 cup of hot salsa (I added a bit at a time so not to have too much liquid in the meatloaf). The I put half of the mixture in a loaf pan and kind of pressed a divet in it and put shredded chedder cheese in and put the rest of the meat mixture on top and presses it down. I baked it for an hour at 350F but it didn't look done so I put it back in for 15 minutes. I took it out and drained the fat and poured taco sauce over the top and baked it for about 10 more minutes. Serve with with salad.
