8 oz. white, milk or bittersweet chocolate, chopped fine (I use bittersweet)
1 cup toasted almonds, coarsely chopped
1 cup dried sour cherries
Recipe
Line a sheet tray wit wax paper. Melt 2/3 of the chocolate in the microwave on low power, checking and stirring occasionally to be sure it doesn't burn. Stir in the remaining chocolate and continue to stir until completely melted. The chocolate should feel cool to the toch. If not, stir in a large chunk of chocolate to cool it down further, and remove the excess unmelted chocolate left.
Stir in the almonds and cherries. Using 2 tsp. drop clusters of the chocolate mixture onto the prepared tray. Put an almond or cherry on top of each cluster. Place tray in the refrigerator until the chocolates set, at least 15 minutes. Release them from the paper by slipping a knife under each.
