Heidi's Springtime Primavera

List of Ingredients
- 6 Tbs. olive oil
- 2 large tomatoes, diced and juice reserved
- 3 cloves garlic, minced
- 1 lb. fresh asparagus
- 8 oz. fresh baby portabella mushrooms, quartered
- 1 small can sliced black olives
- 1 tsp. dried basil
- 1 1/2 tsp. dried oregano
- 1/2 lemon, juiced
- 1 tsp. sugar
- 1/8 tsp. Tabasco sauce
- 1 1 lb. box of linguine or spaghetti
Instructions
- Cook pasta according to package directions.
- Snap ends off of asparagus and blanch in boiling water for 4 min. Drain and run under cold water. Cut into 1 inch pieces and set aside.
- Meanwhile, heat olive oil in a heavy 3 qt. Saucepan. Add garlic and cook for approx. 30 sec.
- Add mushrooms and cook for about 5 min. Add tomatoes, juice, olives, basil, oregano and sugar and cook 5 min. more.
- Stir in asparagus and lemon juice. Cook for 2-3 min. Take off of heat and sprinkle Tabasco sauce over sauce and stir. Serve over pasta.
