    Chicken in Sun-dried Tomato Cream Sauce

    1 Tbs. butter
    1 clove garlic, minced
    1 Tbs. flour
    3/4 cup chicken broth, divided
    1/2 cup heavy cream (I use half and half)
    4 sun-dried tomatoes packed in oil, minced
    1 Tbs. sun-dried tomato oil
    1/2 tsp dried thyme
    1/4 tsp. salt
    1/4 tsp crushed red pepper flakes
    2 boneless, skinless chicken breast halves, flattened to 1/4" thickness

    In a skillet, melt butter. Add garlic and cook for 30 seconds. Stir in flour and cook 1 minute. Stir in 1/2 cup broth, cream, tomatoes, thyme, salt and pepper flakes. Bring to a boil and cook one minute. Pour sauce into a cup and set aside. Wipe skillet.
    Heat tomato oil in skellet. Saute chicken 8 minutes, turning once or until no longer pink. Transfer to a plate. Add remaining 1/4 cup broth to skillet. Bring to a boil scraping up browned bits. Mix in cream sauce. Add chicken and heat through.
