Onions and Cherries

You won't even believe how good this is on chicken. Use it on burgers too!
List of Ingredients
2 Tbs. olive oil
2 medium onions, sliced
1/2 cup dried tart cherries
1 Tbs. brown sugar
1 Tbs. red wine vinegar
1/2 tsp. dried thyme
salt and pepperRecipe
Heat oil in large skillet over medium heat. Cook onions stirring, 5-6 minutes or until light brown. Reduce heat. Add cherries. Mix well. In a bowl, combine sugar, vinegar, thyme, salt and pepper. Pour over onions. Mix gently. Simmer, covered, 3-4 minutes. Serve warm or at room temperature.
