    Sour Cherry Cream Pie

    List of Ingredients


    Baked 9" Deep Dish or 10" Pie Shell

    For Cream Layer:
    3/4 Cup Sugar
    6 T Flour
    1/4 t Salt
    2 Cups Milk
    3 Egg Yolks
    2 t Vanilla

    For Cherry Glaze:
    2 Cups Sour Pitted Cherries
    1 1/4 Cups Cherry Juice
    1 Cup Sugar
    1/3 Cup Corn Starch

    Recipe

    Cream Layer:
    Combine sugar, flour, and salt in top of a double boiler. Add milk and egg yolks, mixing well. Cook over boiling water, stirring constantly for about 7 minutes, until thick and creamy. Remove from heat and stir in vanilla. Cool slightly, then spread in pie shell.

    Cherry Glaze:
    Drain cherries. Heat 1 1/4 cups drained juice to boiling. Meanwhile, mix sugar and cornstarch, then add enough saved juice or water to make a smooth paste. Pour this mixture into the boiling cherry juice, stirring and cooking for about 2 minutes until the mixture is smooth and thick. Remove from heat, mix in the cherries, and spread over cream layer in the pie shell. Store pie in the refrigerator.
