    good chocolate covered, or coconut covered if you prefer


    List of Ingredients


    • 2 cups granulated sugar
    • 1 cup corn syrup - clear (Karo works fine)
    • 3/4 cup hot water (boiling)
    • 3 tsp. vanilla
    • 3 T. unflavored gelatin dissolved in 3/4 cup cold water


    Instructions


    1. Put sugar, corn syrup and hot water in saucepan.
    2. Cook mixture to 240 degrees on candy thermometer.
    3. Remove from heat and add the dissolved gelatin to hot syrup.
    4. Pour into mixer bowl (good strong mixer) and beat.
    5. When mixture starts getting heavy, add the vanilla
    6. Beat until mixture sticks to beaters. This could take awhile
    7. Pour into parchment lined 9 x 13 pan
    8. Allow to stand at room temperature for 24 hours
    9. Turn marshmallow out of pan onto powdered coated board
    10. Dampen parchment and peel off.
    11. Cut into squares with scissors dipped in water to keep from sticking
    12. Coat with chocolate or whatever.
