good chocolate covered, or coconut covered if you prefer
List of Ingredients
- 2 cups granulated sugar
- 1 cup corn syrup - clear (Karo works fine)
- 3/4 cup hot water (boiling)
- 3 tsp. vanilla
- 3 T. unflavored gelatin dissolved in 3/4 cup cold water
Instructions
- Put sugar, corn syrup and hot water in saucepan.
- Cook mixture to 240 degrees on candy thermometer.
- Remove from heat and add the dissolved gelatin to hot syrup.
- Pour into mixer bowl (good strong mixer) and beat.
- When mixture starts getting heavy, add the vanilla
- Beat until mixture sticks to beaters. This could take awhile
- Pour into parchment lined 9 x 13 pan
- Allow to stand at room temperature for 24 hours
- Turn marshmallow out of pan onto powdered coated board
- Dampen parchment and peel off.
- Cut into squares with scissors dipped in water to keep from sticking
- Coat with chocolate or whatever.
