    The recipe says it makes 25, but they must be really really big, because I always get over 3 dozen big cookies
    from the recipe


    List of Ingredients


    • 4 1/2 cups flour
    • 4 tsp. ginger, ground
    • 2 tsp. baking soda
    • 1 1/2 tsp. ground cinnamon
    • 1 tsp. ground cloves
    • 1/2 tsp. salt
    • 1 1/2 cups shortening
    • 2 cups sugar
    • 2 eggs
    • 1/2 cup molasses
    • 3/4 cup coarse or granulated sugar


    Instructions


    1. In medium bowl, stir together dry ingredients, set aside
    2. In large mixing bowl, beat shortening until softened.
    3. Gradually add 2 cups sugar, beat until fluffy.
    4. Add eggs and molasses, beat well
    5. Beat in 1/2 of the flour mixture, then stir rest in by hand
    6. Shape dough in 2 inch balls, roll in sugar. Place 2 1/2 inches apart on ungreased baking sheet
    7. Bake at 350 degrees for 12-14 minutes or until light brown ad puffed. Do not overbake. Let stand 2 minutes before taking off cookie sheet. Makes 25 cookies


    Final Comments


    If in a hurry, just mix all wet ingredients, then add all dry ingredients and beat with spoon until blended. They are still delicious, just not as softly rounded as when they are well beaten.
