    Mom says it is the lemon extract that makes these so good and different from the average filled cookie

    Cream 2 cups sugar with 1 cup and 2 T. Crisco. Add 2 eggs.

    Mix together 6 cups flour, 4 tsp. cream of tartar, 2 tsp. soda and 1 tsp. salt.

    Add alternatively with 1 cup milk that has a teaspoon of lemon extract stirred into it. Begin and end with the flour mixture.

    Chill dough.

    Filling:
    3 cups raisins, coarsely chopped
    2 T. flour
    1 cup sugar
    1 cup water
    Boil all filling ingredients until it thickens; stirring constantly for a couple of minutes. Chill filling.

    Roll out and cut round cookies. Half of them will either need to have a little hole cut in the center (maybe use a thimble) or make a cross on the dough. Add 1 heaping teaspoon per cookie, cover and seal top.

    Bake on ungreased cookie sheets either at 400 for 8-10 minutes or 350 for 10-12 minutes until golden.
