Raspberry-cheese Breakfast Bars

Recipe Introduction
Favorite of Schillig and Loehr children, and their parents. Best to advise little ones that they are yucky if you want to eat any.
List of Ingredients
- 1 1/4 c. quick cooking oats
- 1 c flour
- 1 c sugar
- 1 c chopped walnuts
- 3/4 c butter, softened
- 1/2 c backed brown sugar
- 1 c black raspberry jam or jelly
- 1/3 c sugar
- 1 egg
- 1 8 oz. package cream cheese softened
- 1 c. coconut
Instructions
- Heat oven to 350 degrees
- Mix oats, flour, 1 c granulated sugar, the coconut, nuts, butter and brown sugar until crumbly; reserve 1 1/2 cups.
- Pat remaining curmbly mixture in ungreased rectangular pan, 13 x 0.
- Bake 15 minutes; cool 5 minutes.
- Spread with jam.
- Mix 1/3 cup sugar, the egg and cream cheese; pour over jam.
- Sprinkle with reserved crumbly mixture.
- bake until top is golden brown, 20 to 25 minutes; cool.
- Cut into bars, about 2 x 1/1/2 inches. Makes 36 bars.
