Key Lime Pie

List of Ingredients
1 small package sugar-free lime jello
16 ounces cream cheese
1 teaspoon lemon or lime extract
1 Trisciut pie crust (recipe below)
Make Jello according to the package directions but with only half the water.
In a large bowl, whip the cream cheese with an electric mixer until smooth.
Slowly whip in the liquid jello mixture. Add the lemon or lime extract to
taste and pour into the pie crust. Chill for 3 or 4 hours or until set.
Serves 6.
(the recipe doesn't call for it, and I haven't actually tried the recipe... but
I would maybe put some whipped cream on top... or meringue made with sugar
substitute.)
TRISCUIT PIE CRUST
1 1/2 cups finely crushed low sodium Triscuits
2 packets sugar substitute
3 tablespoons soft butter
1 tablespoon water
Combine the crumbs and sugar substitute with the butter and water. Spread this
mixture in a a pie pan, pressing firmly on onto the sides and bottom. Fill with
